Outlet Manager - Mireio
The Specialty Restaurant Manager is responsible to administer the successful planning, organization, and coordination of all food and beverage activities in their designated outlet, while providing exceptional 5-
stars service. Adherence to established policies, standards and procedures are required at all times in order to achieve high levels of customer satisfaction, quality service, compliance with corporate policies and procedures and local regulations while meeting / exceeding financial goals.
The restaurant manager will lead a management and service team of colleagues to a common goal for the guest, colleague, owner and brand awareness.
Property Overview : This magnificent complex boasts a 30-storey new construction and two luxury International Hotel brands at one desired address! Raffles Makati and Fairmont Makati consists of 32 Raffles Suites located atop 280 Fairmont Hotel rooms, 237 Raffles Residences and is situated in what is considered the finest location in Manila -
downtown Makati. The complex, is located directly across from the Greenbelt Shopping Center and in a neighborhood famous for nightlife, dining options and world-class shopping.
Summary of Responsibilities :
Reporting to the Director of Food & Beverage responsibilities and essential job functions include but are not limited to the following :
Initiatives to aid with the continued development of the Raffles and Fairmont Makati’s positioning as a leader in Food & Beverage service destination.
Displays a compelling scene of energy in the work environment and maintain a positive working relationship with all the colleagues.
Demonstrate a complete understanding of outlet Policies & Procedures and Service Standards as outlined in the Fairmont Hotels & Resorts
Ongoing control and enhancement of quality standards and guest service.
To always take corrective action if service errors occur, ensuring all solutions exceed the Guests expectation
Demonstrates strong leadership qualities by religiously practicing the Raffles and Fairmont values.
Working together with the Chef De Cuisine Specialty , to develop new menu ideas and promotions
Ensure all colleagues adhere to the standards.
Driving Food and Beverage sales through creation of new ideas and promotions.
Ensures the outlets upkeep and cleanliness
Assist with recruiting, staffing and scheduling ensuring an adequate balanced staff and leadership level while maintaining forecasted productivities.
Monitoring and continued development of food & beverage controls.
The continuous development and performance management of all colleagues and leaders.
Ensuring all training processes are set up and maintained for all leaders and colleagues.
Conduct daily briefings in the outlet daily trainings.
Maintains the outlet log book
Assist the colleagues whenever and where ever required.
Carrying out any miscellaneous duties and responsibilities as requested by the Director if Food & Beverage pertaining to total quality service delivered in the Restaurant
Clearly understands the Fairmont / Raffles code of Ethics .
Lives the Raffles and Fairmont service promise
Preparing outlet budgets, forecasts and promotional plans.
College / University Diploma in Hotel Management
Three (3) experience as Outlet Manager or Junior Manager in a fine dining restaurant
Excellent communication skills; third language will be an advantage
Strong interpersonal and problem solving skills
Excellent customer service skills
Excellent leadership skills
Visa Requirements : Must be eligible to work in the Philippines.
